Looking for a healthy vegan alternative to replace commercial bread? Here is a recipe to make no-knead oat and seed bread that doesn’t contain any flour or yeast. This delicious loaf is vegan, oil-free, gluten-free, rich in fiber, healthy fats, protein and micronutrients! Begin by mixing all the dry ingredients together, including 180 grams of rolled oats, 100 grams of sunflower seeds, 80 grams of ground flaxseed, 50 grams of pumpkin seeds, 30 grams (3.5 tablespoons) of chia seeds, 30 grams of psyllium husk, and 5 grams of salt (1 teaspoon) in a big bowl. Add in the wet ingredients, including 400 milliliters (2 cups) of hot water and 15 milliliters (1 tablespoon) of apple cider vinegar. Stir the mixture with a wooden spoon, then switch to use your hands when cool enough. When fully formed, move the dough to a loaf tin lined with parchment paper and keep it covered with plastic wrap or a damp kitchen towel for 30 minutes. During the proofing process, a cohesive flourless loaf will form. The water should have absorbed completely during this time. If not, let it sit longer. Bake at a temperature of 180 degrees Celsius (360 degrees Fahrenheit) for approximately 50-60 minutes until the top is a golden-brown color. Let it cool fully prior to slicing. Bon Appétit!
